Hey sweet people.
I didn’t know what to call this dish, it reminds me of a raw pizza that can be rolled up like a pancake 😀 You can suggest a name that would be better after you have tried them. But, all in all, it doesn’t matter what we call them as long as they are tasty. I hope you’ll see for yourself and let me know your impressions.
young coconut meat (generally 1 coconut per one pancake)
extra virgin olive oil
red ramiro pepper, tomatoes, onion and spices for toppings
Blend the meat from young coconuts, a small part of the onion with some Sauerkraut , rather start with a smaller amount and add more if you wish. I keep adding more until the batter starts to taste a bit sour and I almost don’t taste the coconut flavour any longer. I don’t add salt as the Sauerkraut is normally too salty. You can add some water to help the blender to operate smoothly. Start with just a little water and then add some more if necessary.
Prepare the dehydrator sheets and spread just little olive oil on each (I tried to make the pancakes with olive oil and without, both ways are ok). Spread some pancake batter on the sheet in the form of a pancake and sprinkle a little olive oil on it, then add some red ramiro pepper and onions cut thinly. You can use pizza spices and thinly sliced tomatoes. I used various toppings and I like also thinly sliced onions soaked in Tamari. Of course, crushed garlic is just perfect and it gives the pancakes the flavour of “langos” – a typical Hungarian fried flat bread that is present also in Slovak cuisine. So if you want to eat a raw vegan langos (the Slovak way), definitely top them with crushed garlic and then after dehydrating them serve with some cashew sour cream on top.
