Raw vegan fruit leathers are great to have on hand. They are very versatile, when you have a sweet tooth. And especially when you have children. They love them.
I don’t make the typical smooth fruit leathers because I like them with small fruit chunks. The taste is completely different than that of the usual fruit leathers.
You can use almost every fruit to prepare them. These in the picture above are made of bananas, sour cherries and grated apple.
There are two ways to prepare them.
1. you blend your fruits as smooth as possible e.g. you blend bananas with a few drops of lemon juice. Or you blend bananas and some berries, like mulberries. If you don’t like the grains from berries, you can strain the mixture. Spread the mixture on the parchment paper or teflex sheet of your dehydrator or make smaller round pancakes on the sheets.
2. You blend the fruits just as long as to create the texture you like, with chunks of fruit. Spread the mixture on the parchment paper or teflex sheet of your dehydrator or make smaller round pancakes on the sheets. These chunky fruit leathers will dehydrate longer.
You can enjoy them just like they are. They are very suitable for travelling when you are outside for longer periods of time and you need a quick snack to gain some energy. At home you can prepare raw vegan pancakes or rolls with them by filling them with cocoa or fruit cream made with cashews or almond butter.
I love the combination of banana pancakes with young coconut flesh. Try it, you won’t be dissapointed. They’ll make heaven in your mouth.
