Carrot and courgette crackers (nutfree, raw, vegan)

I’ve been making these almost the whole winter. They are very easy to make and when  taken from the dehydrator they are crispy as if taken out of the oven. I let them dry out on the radiator.

Ingredients:

carrots

zucchini (courgette)

marjoram

himalayan salt

black pepper

olive oil

psyllium

onion, garlic (optional)

nutritional yeast (optional)

 

Preparation:

Grate carrots and zucchini (I used the food processor), season it, put in some psyllium husks, mix by hand and let it sit for an hour or so. Hopefully, you don’t eat it all before you get to make the crackers as it happened to me once. It is so good and wait until you taste the crackers, you will be in heaven.
