I’m so excited to share with you the recipe for the best raw vegan pesto I’ve ever made. I’ve got lots of rocket in my greenhouse that is being ignored by the slugs in my garden. They eat everything (they love my precious kale) but leave rocket to me. So nice of them. But until now I had been ignoring the rocket too, its taste being too pronounced for me.
And the time came when I felt like making a pesto with cucumber noodles. And I was thinking, what if I stepped out of my comfort zone and tried to use the rocket? I can say that I was glad I did it and since then I have recreated this pesto many times. Hopefully, the slugs are going to continue ignoring the rocket in my greenhouse.
cucumber for noodles (you can use zucchini as well)
1 T hemp hearts
1 Cup fresh basil
handful rocket (or two, as you wish)
1 yellow tomato (or cherry tomatoes, or you can leave them out)
1 clove smoked garlic
2 halves sund dried tomatoes (you can add more if you want it to be more salty)
skin and the middle of the cucumber that remains after spiralising
Spiralise the cucumber into noodles. Blend all other ingredients together and toss the cucumber noodles with the pesto and enjoy this paradise in your mouth.
